FIELD: food industry.
SUBSTANCE: invention relates to food industry, namely to improvement of nutritional value of edible mushrooms. Method provides for application of vacuum-pulse treatment of mushrooms at 55-65°C. This method allows for producing items with high nutritional value. Absence of chemical reagents during self-hydrolysis makes the resulting product clean from ecological point of view.
EFFECT: ecologically clean mushrooms.
