FIELD: food industry.
SUBSTANCE: invention relates to food industry. During preserves preparation one uses humpback salmon fillet pieces, laminaria, vegetables and fish broth. The fish broth is represented by the hydrolysate produced by way of fermentative hydrolysis with Protamex preparation of collagen-containing wastes remaining after fish filleting. According to the first version, one additionally uses pearl barley. According to the second version, one uses mushrooms. All the components are used at the specified components ratio.
EFFECT: invention ensures manufacture of preserved liquid fish soups ready for consumption.
