FIELD: food industry.

SUBSTANCE: invention is referred to poultry-processing industry and may be used for semi-cooked items production from poultry meat. Method provides for deboning, minced meat production, mixing and introduction of ingredients according to recipe and product formation. Layers meat of mechanical deboning is used for minced meat production. Fat-free flour from amaranth seeds is introduced in the amount of 10-15% of minced meat weight during mixing stage. Besides, flour hydration is performed in cold water during 30 minutes at flour/water ratio 1:3.

EFFECT: canned food with high digestibility properties.
