SUBSTANCE: invention relates to the food industry, namely the production of meat and plant based semi-finished products from poultry meat, particularly meatballs. Method includes the preparation and grinding of turkey fillet, the preparation of minced meat from it with putting vegetable protein, salt, drinking water, fat and functional ingredients, molding and subsequent cooling or freezing. Add into the minced meat the mechanically deboned poultry meat, oatmeal, zucchini, spinach and onions are used as a source of vegetable protein, flax oil is used as a fat, orange fiber Citri – Fi 200, calcium enricher and succinic acid are used as functional ingredients. Finished minced mass is kept in freezing chambers for 15–20 minutes at a temperature of minus 18–22 °C. A quantitative ratio of the initial components is selected.

EFFECT: expansion of the range of meat and plant based semi-finished products or minced meat for treatment-and-prophylactic, dietary, baby and special food is provided.
