FIELD: foods.
SUBSTANCE: method comprises mixing at least one hydrophobic phytosterol with aqueous phase followed by formation of the first disperse system, homogenisation of the first disperse system with preparation of the second disperse system at the same time. The particles' size of hydrophobic phytosterol of the first disperse system and the second disperse system ranges about from 0.1 micron to 100 micron. Hydrophobic phytosterol is selected from phytosterols and phytostanols. Aqueous phase contains concentrate of citrus juice. Blending and/or homogenisation are carried out without emulsifiers or thickening agents. The other version of the method includes heating of the second disperse system. The particles' size of phytosterol is about from 0.1 micron to about 30 micron, and majority of the particles of hydrophobic phytosterol in this range is from about 0.2 micron to about 10 micron.
EFFECT: method allows preparing stable disperse system without production supplements.
