SUBSTANCE: yeast strain Saccharomyces cerevisiae "ВКПМ" Y-3194 has been obtained by selective picking of hybrids strains of yeast Saccharomyces cerevisiae B7 and Saccharomyces cerevisiae 12B-B72. Degree of fermenting sugars is 65%. Amount of ethanol formed is 4.79%.
EFFECT: increased degree of fermentation of sugars and a high formation of ethanol as a result of fermentation.
