FIELD: food products, chemistry.
SUBSTANCE: method implies mixing final-product brown sugar with high green diluted up to 74-76% of solids content. The obtained affination massecuite is centrifuged. Prior to affination high green is treated by ozone-air mixture with the ozone concentration in the mixture equal to 5-15 g/m3 and with the amount of ozone-air mixture equal to 2-4 nm3/m3 of the runoff.
EFFECT: proposed method allows increasing affinated sugar purity on 0,4%, decreasing its colour degree on 15,8% and reducing processing time in 1,6 times as compared to the known process.
