FIELD: food-processing industry, in particular, production of protein isolates from seeds of oil-bearing crops, more particular, canola seeds.
SUBSTANCE: method involves extracting flour from oil-bearing crop seeds; concentrating aqueous protein solution to its protein content of at least 200 g/l and diluting concentrated protein solution with cooled water having temperature below 15 C for producing of protein micelles; settling micelles for obtaining of protein micelle mass; separating protein micelle mass from supernatant phase, and drying separated mass when necessary. Supernatant phase may be processed for extracting additional amounts of protein isolate of oil-bearing crop seeds by concentrating said supernatant phase followed by drying thereof for producing of protein isolate with protein content of at least 90 wt%. Concentrated supernatant phase may be mixed in various ratios with at least part of protein micelle mass, and mixture may be dried for obtaining of protein isolate having protein content of at least 90 wt%. Method allows purity extent of protein isolate to be increased up to 100 wt% (Nx6.25).
EFFECT: increased efficiency and high extent of purity of protein isolate.
