FIELD: food production process.
SUBSTANCE: porcini are cut and blanched, garlic is blanched and minced, fat is minced and the said ingredients are mixed with salt and black pepper to obtain stuffing mass. Pork is sliced and beaten, the stuffing mass is placed on the slices, the slices are rolled and fried in on it, the slices are rolled and fried in cooking fat, potatoes are cut, blanched and strained. Onions are cut and browned in margarine, runner beans are cut and frozen, wheat flour is browned in margarine, and potatoes, onions, runner beans, wheat flour, milk, salt and black pepper are mixed without oxygen access to obtain the garnish. Rolls, garnish and mushroom broth are packed, sealed and sterilised.
EFFECT: expanded range of techniques and dishes to obtain new canned food of increased digestibility as compared to known dish for 2,1·105 to 2,5·105.
