FIELD: food production process.
SUBSTANCE: wheat flour, vegetable oil, potable water and salt are mixed to obtain dough. The dough is handled, rolled and cut, bamboo shoots are frozen and minced, shrimp meat is chopped. Bamboo shoots, shrimp meat, corn flour, vegetable oil, rice wine, soy sauce, sugar, starch and black pepper are mixed without oxygen access to obtain a smooth mass. The mass is added to the dough to obtain ravioli, lettuce is cut and frozen. It is mixed with salt and laurel leaves without oxygen access. The ravioli, obtained mixture and fish broth are packed, sealed and sterilised.
EFFECT: canned food features improved digestibility as compared to similar dish.
