FIELD: food industry.
SUBSTANCE: invention relates to chemical technology of natural polymers processing, namely chitine, obtained from crusts of crabs and shrimps, dead bees, mushrooms for creating chitosan-based healthcare products and cosmetic preparations. Method provides for pulverisation of chitine into 0.05-0.2 mm particles, deacetylation by 50% solution of sodium hydroxide during 30-40 min at the temperature of 96-98°C, separation of end product from alkaline solution by filtering, washing of end products with water and drying.
EFFECT: invention allows to reduce time of deacetylation significantly and lower alkaline concentration in waste water.
