FIELD: food industry.
SUBSTANCE: invention relates to food products heat treatment methods. Products and water are put in closed container. Walls of container lower part are heated by putting those walls in contact with heat source. Upper part walls, which are condensation surface, are cooled down by putting those walls outside surface in contact with melting ice for providing of constant conditions on the condensation surface. There is permeable partition between products placement zone and cooled container walls. Steam and condensate can go through this wall. Container's upper part is imparted to the atmosphere.
EFFECT: invention provides better preservation of nutritious matters in products.
