FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry. After preliminary preparation and packing in containers paprika is filled with hot water during 2-3 minutes, then it is substituted with solution of temperature 97°C, sealed and sterilised in autoclave according to the set mode.
EFFECT: invention allows for decrease sterilisation duration with simultaneous increase of finished product quality and saves heating energy and water.
