FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry. Method is characterised by the fact that after preliminary preparation and packing in containers vegetables are exposed to warming with hot air fed from the first and the second section of container neck interchangebly during 3-3.5 minutes. Then containers are filled with the solution of temperature of 95-97°C, exposed to microwave processing, sealed and sterilised in autoclave according to the new mode.
EFFECT: invention allows to increase end products quality.
