FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry. After preliminary preparation and packing in containers SKO 1-82-1000 gherkins are exposed to processing in microwaves during 120-130 sec. Then the salt water of 97°C is fillied, sealed and sterilised in autoclave according to the set sterilisation mode.
EFFECT: invention allows to decrease thermal processing duration, to increase finished product quality with simultaneous saving of thermal energy and water.
