FIELD: food industry.
SUBSTANCE: invention is related to preserved food industry and may be used in production of preserved pickled scallops. After preliminary preparation and packing in containers custard squash is filled with hot water for 2-3 minutes, then it is substituted with solution of temperature not lower than 97°C, sealed and sterilised in autoclave according to new sterilisation mode.
EFFECT: invention allows to decrease sterilisation duration time and save thermal energy and water.
