FIELD: food industry.
SUBSTANCE: invention is proposed for using in food meat processing preserved food industry while production of taste and flavour food additives. Production method provides for emulsifying of spicy flavoured plants extracts with water under action of ultrasonic oscillations at frequency 20 kHz, power 200 Wt, amplitude 140 mcm during 1-5 minutes till homogenous emulsion system is formed.
EFFECT: invention provides for expanded range of taste and flavour additives with simultaneous stability and storage time increase.
