FIELD: food industry.
SUBSTANCE: method provides for treatment of food product with composition for antimicrobial treatment, which is derivative of smoking liquid, containing carbonyl in concentration from 3.0 to 12.0 wt % per unit of volume, phenol compounds in concentration of less than 0.5 wt % per unit of volume and water in concentration of less than 97% per unit of volume, besides derivative of smoking liquid has pH value in the range of 3.0-7.0.
EFFECT: inventions provide for treatment of food product with derivative of smoking liquid to inhibit growth of microorganisms without giving smoked taste to product.
