FIELD: biotechnology; food industry.
SUBSTANCE: invention relates to compositions and methods for improving preservation of color and microbial stability. Composition for improving color retention and microbial stability contains extract of pure hesperidin and deodorised Lamiaceae extract, containing phenol diterpene selected from carnous acid and carnosol and mixtures thereof, wherein pure hesperidin extract contains 80–99% narperidin, and most volatile oil components from Lamiaceae extract have been removed. Also disclosed is a method of applying the composition to a product such as meat, fish or poultry, including processed and fresh or unprocessed meat, poultry and fish.
EFFECT: disclosed composition provides a stable microbial effect, improves color stability of the product in the presence of oxygen during the whole shelf life of the product.
