FIELD: food industry.

SUBSTANCE: composition for improving color preservation and microbial stability of food products contains Punica extract and Lamiaceae extract, wherein most volatile oil components are removed from Lamiaceae extract, and Lamiaceae extract contains phenol diterpene Lamiaceae, selected from carnosic acid and carnosol and mixtures thereof. Food product contains a food product and the specified composition. It is possible to package food product in atmosphere containing 20 % and more of oxygen. Food product treatment method involves application of the above mentioned composition onto or inclusion into the food product. Above mentioned composition can be used as an antimicrobial composition, an antibacterial composition, as well as a fungicidal composition, including an anti-and-yeast composition. Food product contains a food product in combination with Lamiaceae extract essentially free of native essential oil which contains carnosic acid, carnosol and Punica extract, wherein the weight ratio of the extract of Punica extract to the Lamiaceae extract present in the food product is in the range of about 0.625 to about 48, and wherein ellagic acid from the Punica extract is present in the food product in amount of 4 to 24 ppm, and Punica Punalicagins are present in amount of 19 to 120 ppm. Method for producing a food product includes: applying on or including in a food product a combination of Lamiaceae extract, substantially free of native essential oil and representing an antimicrobial preparation, containing carnosic acid, carnosol and Punica extract, wherein the weight ratio of the extract of Punica to the phenol diterpene Lamiaceae present in the food product ranges from about 0.625 to about 48, wherein Punica extract is present in the food product in amount of 4 to 24 ppm of ellagic acid from Punica extract and from 19 to 120 ppm of Punicalagin extract of Punica extract.

EFFECT: invention allows to increase storage life of food products.
