FIELD: food industry.
SUBSTANCE: method envisages water-and-fermentative extraction of milled raw material. Water extraction is performed in two stages. Fermentative treatment is performed only at the second extraction stage with one cytolytic enzyme preparation represented by Viskostar preparation. The vegetal raw material is milled into 2-5 mm sized particles. The raw material is represented by herb of St.-John's wort, balm, peppermint, leaves of birch and plantain.
EFFECT: invention allows to increase the yield of extractive substances of vegetal raw material and the content of antioxidant substances in the extracts.
