FIELD: food industry.

SUBSTANCE: those samples of honey have the highest ability to structure water, and accordingly have highest biological activity according to this method, in 50%-water solutions of which in the range of frequencies of 15 kHz-25 MHz they detect most considerable shift of tgδ maximum by inductive dielectric method to the field of lower frequencies relative to maximum of tgδ used to make water solutions.

EFFECT: invention makes it possible to detect samples of honey having highest biological activity, which are able to recover damaged structure of water in human tissues after various unfavourable effects, including environmental ones.
