FIELD: food industry.
SUBSTANCE: invention relates to the food industry, namely, to production of fermented beverages. The blended honey beverage is prepared in four consecutive stages: preparation of aged honey, preparation of the starter, preparation of the base part of the wort, preparation of the wort for blending, followed by cooling and clarification of the finished beverage. Also described are variants of compositions for preparing a blended honey beverage.
EFFECT: invention allows for production of a product with improved organoleptic characteristics due to the preservation of quality, taste and scent of the included natural ingredients and nutrients of various kinds of honey, wild berries, beebread, and natural carbonation.
