SUBSTANCE: invention relates to device for manufacturing or processing of food, especially meat. The device contains at least one knife grille, through which holes food product can be squeezed and which is connected with the knife moving along it with its cutting edge (14) mounted in a holder (10) of the knife. The knife (14) has clamping insert to fix the ceramic blade, and the blade has at least one side support surface (31.1, 31.2), which moves in the plane of the cutting edge.

EFFECT: invention enables to reduce excessive ware of the knife.
