SUBSTANCE: invention refers to agriculture and refers to method of potato storage. When storing potatoes in healing and basic periods the potato processing with ozone is carried out once a month at a concentration of ozone 2.0-3.0 mg/m3 and exposure 24-48 hours for plant potato and food potato at the storage temperature of 2-4°C. For potatoes for processing into fried potato products during storage at the temperature of 8-10°C the processing is carried out once a month with an exposure of 72-96 hours.

EFFECT: invention enables to reduce losses during storage and improve quality of plant potatoes and potatoes meant for processing.
