FIELD: food industry.
SUBSTANCE: method involves brew distilling in a brew epuration column (BEC) heated with live steam with thermal energy of epurated water-and-alcohol vapour used for heating the final purification column and the column for concentration of methanol and head impurities (CCMHI)(operating under a subatmospheric pressure) through their boilers. Brew distillate epuation is performed with delivery of hydraulic selection water onto the epuration column (EC) upper plate having a distillation, a digestion and a concentration parts. Epurate rectification proceeds in a digestion column (DC), operating under overpressure and heated with live steam, water-and-alcohol vapour from the upper plate whereof heating EC and the distillate column (DC), and in the alcohol column (AC), operating under a subatmospheric pressure and heated with water-and-alcohol vapour from the BEC upper plate and the upper plate of the EC concentration zone lower part. Fraction from the EC condenser and vapour condensate from the fusel condenser are directed into the decantator for delamination into two liquid phases. The lower water stratum of liquid from the decantator and hydraulic selection water are delivered onto the DC upper plate while fusel alcohol fraction from the rectification column is fed onto the supply plate of this column Fraction of ethyl alcohol is extracted from liquid phase of the DC digestion part lower plates and directed onto the EC distillation part upper plate while vapour condensate from the DC condenser is joined with the upper stratum of liquid from the decantator and discharged from the brew rectification system as the head and intermediate impurities fraction. Additionally, the method involves distillation of fractions from the BEC and AC condensers, the final purification column, the carbon dioxide separator condenser and the alcohol traps in CCMHI, from the condenser whereof one bleeds head impurities concentrate discharged from the brew rectification installation while still liquor is returned into the brew.
EFFECT: invention enables production of rectified alcohol of improved quality at reduced cost.
