FIELD: food industry.
SUBSTANCE: method for production of mixed or drinking milk or fresh cheese involves a homogenisation stage following that of fermentation. Homogenisation is performed with the help of a rotor-stator homogeniser containing a ring rotor head and a ring stator head with each rotor/stator ring equipped with specified width radial grooves, the proposed method involving adjustment of the rotor rotation rate for peripheral speed adjustment.
EFFECT: device may be adapted for performance of homogenisation operations with reduced impact on the texture and without loss of viscosity.
