SUBSTANCE: method of producing an expressed sour milk product includes the following: step 1) obtaining a liquid sour milk product diluted in relation to carbohydrates, in which the concentration of carbohydrates does not exceed 3.00 wt.%. of the total mass of liquid sour dairy product diluted in relation to carbohydrates, the protein concentration ranges from 1.50 to 2.75 wt.%. of the total weight of the liquid acidic carbohydrate dilute dairy product, and the maximum pH value is 5.00, wherein step 1) includes the following: providing the raw milk material, diluting it by adding an aqueous carbohydrate dilution liquid, which is water, and acidification; step 2) separation of a liquid sour dairy product diluted in relation to carbohydrates, thereby obtaining a expressed sour milk product with a reduced concentration of carbohydrates and sour whey; step 3) extraction of the expressed sour milk product.

EFFECT: invention makes it possible to improve the separation stage, increasing the removal of lactose.
