FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to dairy industry. Acid whey composition contains lactose of at least 3.20 wt. % and lactic acid bacteria, which are at least partially in a living state and contain, at least one type of lactic acid bacteria possessing low ability to subject lactose to metabolism in acid whey, wherein stability of lactose is more than 85 %, preferably more than 88 % during storage for 7 days at 32 °C. Also disclosed are a method of producing an acid whey composition and use thereof.
EFFECT: invention ensures production of an acid whey composition with high lactose content and high stability during storage for 7 days and more.
