SUBSTANCE: invention relates to poultry treatment. The method envisages longitudinal cutting of chicken legs suspended by the ankle joint to a holder representing a part of holders group moving along the technological line. One performs a positioning step for legs placement into the cutting position. Then, at the piercing step, the blade contacts the legs. After the piercing step a longitudinal cutting step follows whereat the blade moves along the legs and makes a slit in the leg longitudinal direction for ensuring implementation of the subsequent step of bones separation from the legs. At the positioning step the first clamping element contacts the legs near the knee joint for the legs clamping to the leg mobile support surface that is positioned opposite the clamping element; the second clamping element contacts the legs at the lateral side for the legs moving essentially into position wherein the drumstick and the thigh will be oriented linearly relative to each other. The device is intended for the method implementation.

EFFECT: invention ensures reliable implementation of the operation of legs cutting, excluding bone splinters formation.
