FIELD: process engineering.
SUBSTANCE: invention relates to food industry. Proposed method used three-stage drying. First stage comprises initial material pre-drying in vacuum, second stage performs drying by superheated steam, and third stage makes final vacuum drying. Note here that, at first stage, moisture is removed from initial material at 25-30 kPa and 65 - 70°C. At second stage, moisture is removed from first stage pre-dried material in pulsed vibration boiling layer at atmospheric pressure and superheated steam temperature at material layer inlet of 130 -140°C, and at material layer outlet of 105 - 110°C. At third stage, moisture content of material with temperature of 80 - 85°C is changed to finite value by self-evaporation heat at 25 - 30 kPa, 65 - 70°C and with material transfer in dense layer by gravity. Invention covers also device to implement above described method.
EFFECT: higher efficiency of drying.
