FIELD: food industry.
SUBSTANCE: invention relates to food industry. The method involves clearing edible mushrooms from non-food inclusions, chopping the mushrooms, preparation of starch or flour paste, its cooling to a temperature of 70-90°C, mixing the chopped mushrooms with the paste, cooling the produced mass to a temperature of 10-20°C, rolling it into a 3-10 mm thick stratum, punching a product imitating cut mushrooms from it. The product is frozen at a temperature of minus 15 - 23°C. The ratio of used components is the following, wt %: edible mushrooms - 75-95; starch or flour paste - 5-25. Prior to chopping the edible mushrooms are boiled in water during 5-20 minutes. The ready product imitating cut mushrooms may be preserved at a temperature of minus 15 - 23°C for up to 6 month. Prior to consumption the product is subjected to obligatory cooking i.e. baking, frying in oil, but not boiling.
EFFECT: invention allows to produce a product imitating cut valuable mushrooms with usage of low grade mushroom raw material.
