FIELD: food industry.
SUBSTANCE: inventions group relates to processing low-caloric food products. Juice is used, processed by way of selective removal of a quantity of sucrose that exceeds that of primary sugars to produce a flow of clarified low-caloric juice containing 0-30 wt % of sucrose. The end product is produced of the clarified low-caloric juice. The system for juice processing involves a device for original single-strength juice microfiltration stage performance; the device ensures production of a flow of primary retentate containing heavy solid juice particles and of a flow of primary permeate containing clarified juice; additionally the system involves a device for nanofiltration stage performance, the device ensures selective removal of a quantity of sucrose that exceeds that of primary sugars from clarified juice, as a result one produces a flow of secondary retentate containing a solution with higher Brix degree indices than those of original single-strength juice and a flow of secondary permeate containing clarified low-caloric juice containing 0-30 wt % of sucrose.
EFFECT: inventions group allows to produce a low-caloric product having a sweet taste profile.
