FIELD: food industry.
SUBSTANCE: invention relates to a method for production of corn or potato-based dough food products and to an oven for drying and/or heating flat dough pieces. According to the invention the method envisages production of dough, its rolling, cutting pieces of rolled dough, running cut pieces through the oven for drying and/or heating, twisting dough pieces to produce hollow thin tubes during or after heating and/or drying. The oven for drying and/or heating flat dough pieces has a device for twisting flat dough pieces during drying or immediately after it. The twisted food products produced of corn or potato-based flat dough pieces have the form of hollow thin tubes with fat content equal to 18% - 26%, measured without seasonings. The invention relates to a device for twisting flat dough pieces in the form of suspended blind designed so that it can by placed inside the oven.
EFFECT: invention allows to produce a twisted dough-based food product which keeps the shape during further thermal treatment, does not stick to the device used for twisting, has low fat content.
