FIELD: food industry.
SUBSTANCE: invention refers to meat industry and cooked sausages in particular. Method includes preparation of minced sausage, addition of food supplement including protein, lactose, lactulose source, formation, cooking and cooling. The food supplement is a source of milk protein, lactose and lactulose - milk protein and carbon concentrate named Laktobel "ЭД" to the amount of 3-5 mas.% of mince.
EFFECT: invention ensures production of cooked sausages having high quality values and prebiotic properties.
