SUBSTANCE: invention relates to butter industry. The butter preparation method envisages mechanical activation of churning combined with oscillations impact, the fat-and-oil mixture oscillations are formed by frequency-modulated and/or amplitude-modulated signal (s) of the acoustical range.
EFFECT: invention allows to simplify the equipment and reduce energy intensity of the butter preparation process.
