FIELD: dairy products.

SUBSTANCE: invention relates to apparatus for producing butter from cream by churning and can be used at dairy enterprises, peasant farms and private subsidiary farms. Butter churn comprises a horizontal cylindrical container rigidly secured in bearing supports and a churning mechanism shifted downwards relative to the centre of the cylindrical container, made in the form of a cylindrical rotor with a chevron arrangement of blades in the flow-splitting sections L with a brachystochrone-shaped curvilinear surface. The number of blades is from three to seven. The tangent to the brachystochrone forms an angle α from 25° to 35° with the axial line of the rotor. The ratio of the diameter of the churning mechanism d_m to the diameter of the cylindrical container d_e is 0.45.

EFFECT: prevented formation of stagnation areas and higher productivity of the butter churn.
