FIELD: food industry.
SUBSTANCE: invention is related to preservation industry. After packing sugared pulpy juice with initial temperature equal to no less than 60°C into jars one seals and heats the jars in an air flow at a temperature of 170°C during 9 minutes at a rate of 4-5 m/s. Then one performs cooling in a humidified air flow with finely dispersed moisture at a temperature of 20°C and at a rate of 4-5 m/s during 13.5 minutes. During the heating and cooling process the jars are rotated round the longitudinal axis with a frequency equal to 1.83 s-1.
EFFECT: method ensures reduction of the process duration (by 50%) and water consumption per unit of the sterilised products as well as allows to enhance the ready product quality.
