FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular, to beverages preservation methods. The method envisages addition of at least one carboxylic acid anhydride to beverages. The carboxylic acid anhydride is chosen from the group of benzoic acid anhydride and sorbic acid anhydride. Preferably the carboxylic acid anhydrides are introduced in an amount of 1 - 100000 ppm of the quantity of beverages subject to protection.
EFFECT: invention allows to efficiently protect beverages against microorganisms affection in the process of storage.
