FIELD: food industry.
SUBSTANCE: invention relates to food industry. The sausage is prepared from fish mince, a mixture of taste-and-flavour agents and starter cultures, pickling sea salt and a vacuum nitrite salt, anisomin BE, Bactostop Universal complex food additive. One additionally introduces into the mince a mixture of the following fats: palm-kernel oil, palm stearin, palm olein at preset ratio of the initial components.
EFFECT: invention allows to improve physical and chemical and organoleptic properties.
