FIELD: food industry.
SUBSTANCE: invention relates to dairy industry and may be used during production of powdered milk products of specialised purpose, in particular, for alimentation of people in autonomous living conditions (astronauts, military, inhabitants of the extreme north). The method is as follows: one cools, purifies, standardises milk, introduces "Ecolact" milk fat substitute in an amount of 30-70% into the milk, pasteurises the mixture, proceeds with condensation in a vacuum evaporation installation, homogenisation, introduction of alcoholic solution of quercetin in an amount of 0.035-0.055% into the homogenised product and sublimation drying.
EFFECT: invention allows to enhance the end product energy and nutritive value.
