FIELD: food industry.
SUBSTANCE: invention is related to meat industry. One performs selection of raw material represented by pork skin or cattle split. The raw material is preliminarily hydrolysed with hot water. Then the raw material is hydrolysed with sodium hydroxide with concentration equal to 0.03-0.5% at a temperature of 95-100°C and water duty equal to 1:(2-3) during 3-4 hours. The liquid phase is decanted; fat is separated by centrifugation. One performs homogenisation with further combination of the centrifuge centrate. One proceeds with hydrolysis during 1-1.5 hours with subsequent neutralisation with hydrochloric acid up to 6.5-7.0 pH. The ready product is dried.
EFFECT: invention allows to manufacture a product with enhanced technological properties, in particular, gelating, moisture- and fat-retentive capacities.
