FIELD: food industry.
SUBSTANCE: invention relates to food industry. The food product production method involves stages whereat: carrier-material containing protein and water is supplied into the turbo-reactor that has a cylindrical reaction chamber having an essentially horizontal axis and a rotor equipped with blades and capable of rotation round its longitudinal axis located inside the chamber. The rotor is rotated at a rate sufficient for the carrier material centrifugation towards the inner wall of the said reaction chamber and for formation of a dynamic turbulent layer on the inner wall. The carrier material is subjected to thermal treatment and drying in the reaction chamber. The carrier material is relocated in the direction of the turbo-reactor outlet hole; carrier material having undergone thermal treatment and drying and representing the food product discharged from the outlet hole. Created in the reaction chamber is a gaseous medium of superheated steam with oxygen content less than 10 vol. %.
EFFECT: invention usage enables production of a new food product with extended storage life.
