FIELD: food industry.
SUBSTANCE: structure with a supramolecular nucleus of denaturated protein includes coating containing at least one first lipid monolayer. The liposome-like structure contains a charged supramolecular nucleus of denaturated protein with coating of a double lipid layer wherein the lipids used for the coating first monolayer are charged. The interaction between the nucleus and the first monolayer is electrostatic. The lipids used for the second monolayer hydrophobically interacts with the first monolayer. The supramolecular structure in the form of a protein core contains at least one lipid monolayer electrostatically bound with the protein core. The method for production of the supramolecular nucleus of denaturated protein involves the following stages: preparation of a solution of denaturated supramolecular protein structures, such solution pH control for the protein structures to be opposite-charged in relation to the lipids, electrostatic binding of the lipids with the supramolecular structures for a lipid monolayer formation around the supramolecular protein nucleus.
EFFECT: inventions group is aimed at production of protein structures having lipid coating as a protective barrier for the protein nucleus against action of wetness and oxygen, ensuring protection against agglomeration of protein powders during drying, improvement of organoleptic properties of protein, attenuation of the astringent taste of supramolecular protein structures.
