FIELD: food industry.
SUBSTANCE: invention relates to food industry. The fish caviar analogue is produced from a grit filler, by-products of salted herring splitting, tomato paste, vegetable oil, spices, sturgeon fishes caviar sol and water at the specified ratio of components. Water is used having undergone ultrasonic treatment.
EFFECT: invention allows to produce fish caviar analogue close to the natural product in terms of organoleptic and nutritive properties.
