FIELD: food industry.
SUBSTANCE: invention relates to meat industry, in particular, to meat semi-products production. The method envisages cutlet mass and filling manufacture. The cutlet mass includes pork, beef and a pastelike lupine concentrate. The filling includes preserved mushrooms and onions. The zrazy components are taken at the specified quantity ratio.
EFFECT: method ensures enhancement of the meat zrazy biological value and digestibility and reduction of the ready meat products prime costs and meat raw material consumption.
