FIELD: food industry.
SUBSTANCE: invention relates to a method for poultry humane stunning and killing using a system of low atmospheric pressure. The method involves poultry placement into a sealed chamber, constant rate reduction of pressure inside the chamber down to decompression pressure, such decompression pressure being lower than that poultry regularly live, decompression pressure maintenance from approximately 15 to approximately 60 sec to ensure the poultry fatal condition wherein approximately 99% or more of poultry brain wave activity terminates before occurrence of poultry heart complete fibrillation; the pressure inside the chamber is reduced down to decompression pressure during droptime equal to approximately 30-120 sec.
EFFECT: invention usage will enable performance of more humane poultry killing and ensure quality meat production.
