FIELD: food industry.
SUBSTANCE: invention relates to the food industry. Noodle cutting machine, configured to cut a dough sheet into noodle strips for feeding noodle strips to a conveyor, the speed of movement of the noodle strips by the conveyor is lower than the cutting speed, at which the noodle strips are cut from the dough sheet. Noodle cutting machine comprises a first cutting blade roll and a second cutting blade roll arranged to rotate in opposite directions in an engaged state to cut the dough sheet into noodle strips. First row of separating teeth and second row of separating teeth, contacting the outer side of the first cutting blade roll at respective positions different from each other in the direction of rotation of the first cutting blade roll and arranged to separate the noodle strips from the first cutting blade; a third row of separating teeth and a fourth row of separating teeth contacting the outer side of the second cutting blade roll at respective positions different from each other in the direction of rotation of the second cutting blade roll and arranged to separate the noodle strips from the second cutting blade roll. First chute member and second chute member, each provided so as to correspond to the falling positions of any falling noodle strips separated by a first row of separating teeth, noodle strips separated by the second row of separating teeth, noodle strips separated by a third row of separating teeth, and noodle strips separated by a fourth row of separating teeth, and arranged to direct the noodle strips to the conveyor, in which the fourth row of separating teeth, third row of separating teeth, second row of separating teeth and first row of separating teeth are provided in this order in the direction of movement of the conveyor; and wherein the first chute member and the second chute member are provided so as to correspond to falling positions of the noodle strips separated by the first row of separating teeth and to falling positions of the noodle strips separated by the third row of separating teeth, or the first chute member and the second chute member are provided so as to correspond to falling positions of the noodle strips separated by the second row of separating teeth and to falling positions of the noodle strips falling separated by the fourth row of separating teeth.
EFFECT: invention allows noodle strips to be laid on the conveyor so that, when steaming, the sticking of the noodle strips is reduced, and said strips are completely and uniformly gelatinised.
