FIELD: chemistry.
SUBSTANCE: quality of cognac distillates is determined by complex analysis of the composition of volatile and extractive components, wherein indicators proving/disproving authenticity of cognac distillates are the level of weight concentrations of acetaldehyde, ethyl acetal, ethyl acetate, methyl acetate, ethyl caprylate, 1-propanol, isobutanol, isoamyl alcohol, 2-propanol, 1-butanol, 1-hexanol, 2-butanol, acetic acid, propionic acid, butyric acid, 2-phenylethanol, sinapic, coniferyl, syringic aldehydes, vanilin, syringic, vanilic and gallic acids, tanning substances, presence of croton aldehyde and 1,2-propylene glycol, values of ratios of concentrations of pairs of components: isoamyl alcohol/isobutanol, syringic aldehyde/vanilin, syringic aldehyde/syringic acid, vanilin/vanilic acid, as well as the weight ratio of gallic acid in the tanning substances.
EFFECT: rapidness, objectiveness and reliability of determining quality and authenticity of young and old cognac distillates.
