FIELD: food or food products.
SUBSTANCE: group of inventions refers to food compositions imitating meat bread. Food composition includes pieces of meat analogue and gravy. Pieces of meat analogue contain meat and protein materials selected from wheat gluten, soy flour, soy protein concentrate, soy protein isolate, egg albumin, skimmed milk powder and their combinations. Gravy contains a thickener selected from the group consisting of: a gum present in the gravy in an amount of 0.5 to 3.0% by weight of the gravy, and selected from the group consisting of gellan gum, xanthan gum, locust bean gum, pectin, kappa-carrageenan, iota-carrageenan, lambda-carrageenan, cellulose gum, gum arabic, and combinations thereof. Starch is present in the gravy in an amount of 2.0 to 9.0% of the gravy; and combinations thereof, wherein the gravy is 40 to 50% by weight of the food composition. Food composition has a moisture content of 60% to 74% by weight of the food composition and has a loaf-type structure and has no free gravy.
EFFECT: provides the creation of food compositions in the form of meat loaf, but having the characteristics of food compositions in the form of a piece in gravy when eating.
